Myth Busted: Yes, You Can Absolutely Fry With Extra Virgin Olive Oil.

Somewhere along the way, someone lied to you.
They told you that Extra Virgin Olive Oil has a low smoke point. They told you that if you heat it, it turns toxic. They told you to save the good stuff for salads.
Respectfully: That is nonsense.
The ancient ancestors of Greece have been frying potatoes, fish, and eggs in EVOO for centuries. They are some of the healthiest people on earth.
The Science: High-quality EVOO (like Argo) is actually incredibly stable under heat because it is packed with antioxidants that protect the oil from breaking down. The smoke point of good EVOO is around 190°C–210°C (375°F–410°F).
Unless you are planning to deep-fry a turkey at industrial temperatures (which... why?), you are absolutely fine.
Roast your veggies. Sear your steak. Fry your eggs. Don’t let a myth keep you from flavor.
