Smoke point is the wrong number to look at. Here is what actually happens when extra virgin olive oil meets a hot pan, and how to cook with it so you keep the flavour.
There is a myth that refuses to die on the internet: extra virgin olive oil is ruined the moment it hits a hot pan. Use it raw, the advice goes, and reach for something neutral when you actually cook.
It isn't true. And the number people cite to prove it is the wrong number.
What smoke point actually measures
Smoke point is the temperature at which an oil visibly begins to smoke. That is all it is. A single, easily measured threshold, which is why it ends up printed on packaging and repeated in every listicle about cooking oils.
What it does not tell you is how the oil behaves on the way there. An oil can sit well below its smoke point and still be breaking down. Another can run hotter and stay stable. Smoke point is a line on a chart, not a measure of how an oil copes with heat.
Oxidative stability is the number that matters
What actually determines how an oil performs in a pan is its fatty acid composition. Extra virgin olive oil is dominated by oleic acid, a monounsaturated fat. Monounsaturated fats carry a single double bond in the chain, which makes them considerably more resistant to oxidation than the polyunsaturated fats that make up much of rapeseed and sunflower oil.
Those two oils often list a higher smoke point. On paper they look tougher. In a pan, the more fragile fatty acid structure works against them.
Extra virgin olive oil also arrives with its own natural antioxidant compounds intact, because it was never refined. That is part of why it holds up.
Home cooking is not as hot as you think
Most domestic frying happens between 160 and 180 °C. A pan on a hot hob, food going in, moisture coming out — that is the range. Good extra virgin olive oil handles it without complaint.
Deep-frying and hard searing are a different conversation. But sautéing vegetables, frying halloumi, roasting potatoes, finishing a piece of fish: all comfortably inside what the oil can take.
What does change is the flavour
Heat is not free. The grassy, peppery bite that makes a fresh extra virgin distinctive softens as it warms. The oil is still doing its job. It just stops announcing itself.
That is worth knowing, because it points straight at how to cook with it properly.
Two oils, two shifts
Restaurant kitchens solved this a long time ago, and it is not complicated. Fry with one oil. Finish with another.
Our Koroneiki is the one that goes in the pan. Intense, peppery and fruity, with enough character that some of it survives the heat and still shows up in the food.
Then, at the very end, pour a little cold Manaki over the finished plate. Smooth, buttery, mildly sweet, and completely unheated, so nothing has been softened at all.
The first one does the work. The second one takes the credit.
Why a supermarket blend behaves differently
A cheap bottle labelled simply "olive oil" has usually been chemically refined: deodorised, bleached, and stripped of the compounds that give extra virgin its taste and its stability. There is less to lose in a hot pan because most of it was removed at the factory.
That is the real difference, and it is a difference you can taste.
